Through Palay, Chef Fhred has pushed Filipino cuisine into Melbourne’s Fitzroy dining landscape while keeping the food recognisably Filipino: thoughtful, contemporary and grounded in hospitality rather than complication.
Dishes & Dialogues extends that work into media — using food as the starting point for conversations about identity, culture, people and the industry behind the plate.

Kultura in Motion follows Chef Fhred’s return to the Philippines after 11 years in Australia. When UNOX Philippines supplies equipment, brings younger chefs into the kitchen, hosts the 23 September activation and participates in the story, those moments can be documented organically.
The documentary remains editorially led, so exact screen time is not promised. What is guaranteed is that UNOX receives professional campaign content around the partnership while having a genuine reason to exist within the wider film.
